Hashbrown Casserole – A Cracker Barrel Gluten Free Copycat

Posted on

Cracker Barrel’s Hash Brown Casserole is a popular choice for copycat recipes, but the versions I’ve seen call for a can of condensed cream of chicken soup. Beyond being a high fat ingredient it also contains gluten making it impossible for someone following a gluten free diet to use in the recipe. In this version I’ll show you a gluten free, lower fat option that will have you enjoying this savory hash brown casserole again. To print this recipe or for more of my gluten free recipes visit the EZGlutenFree blog at ezgf.blogspot.com Ingredients list • 30 oz frozen shredded hash browns, defrosted • 1 large onion, peeled and finely diced • 12 oz evaporated skim milk • 2 tsp gluten free chicken bouillon granules • cornstarch slurry (1 tbsp of corn starch mixed with 2 tbsp cold water until lump free) • 7 oz low fat Greek yogurt • 6 oz reduced fat cheddar, grated • 4 tbsp butter, melted • 2 tbsp butter, diced • 1 tsp salt • ½ tsp pepper For additional free healthy casserole recipes, cooking tips and tutorials go to www.FaveHealthyRecipes.com To find this recipe at FaveHealthyRecipes go to www.favehealthyrecipes.com

Just pull a bottle of soy sauce out of the fridge and take a look. Besides wheat, its rye, barley and some oats if they are not certified gluten free. Because some oats are processed or grown in areas? that also contain wheat.

Oh? Anne. Soy? Get Out! Boy that’s a hit below the belt.
Ouch! You Mean Wheat is the problem all the way around
    including Wheat germ?

Milk is Ok but if a company decides to mix in wheat or processes on equipment that also processes wheat it will be listed in the ingredients. Last week I bought my daughter some frozen french fries. Potatoes are GF but the ingredients? contained wheat. The fries were coated for extra crispiness so you have to check. Soy sauce is another one that you wouldn’t think contains wheat but it does so you always have to check the ingredients. There are GF versions of most things out there.

That’s the problem Anne. I don’t know what are? GF ingredients.
I thought Cheese came from Milk and Milk was OK.

You have to check the ingredients. If you buy a block of cheddar that is sealed and there is not gluten containing ingredients, then you grate it yourself it should be fine.?

  6. 101CookingEasy

Wow. That’s so? disheartening. Would You
say that freshly Grated Cheeses are OK?

You have to check the ingredients on everything. If it’s not clear in the ingredients you have to check the manufacturers websites. If it’s not clearly stated? there, I usually send off a quick note in the “contact us” section. I’ve seen gluten hidden all over the place including some cheese. You have to be especially careful with pre-crumbled feta and some pre-grated varieties. The sour cream should be fine but I’m not familiar with all the brands. Just check the ingredients.

Oh? no Anne. You mean to say that even some cheeses
are not GF? What about Sour Cream?

This looks like a great side for dinner – what a great? idea. Great recipe 🙂

Thanks for stopping by. If I wasn’t allergic? to gluten I’d be using the cream of chicken soup myself. I used to use the real stuff all the time in my recipes and sauces etc. It’s very tasty and convenient.

Very nice. I’ve made the version with cream of chicken soup and it is very tasty. We serve it with dinner usually. I have not made a video of cooking that yet — most of my vids are meat recipes it seems — I need to round out my? channel with more vegetable recipes. I like the gluten-free idea for this. Thanks!

Hopefully somebody will catch on soon and offer a gluten free product. You really have to be careful since a lot of them do contain gluten.? Sometimes it’s just safer to grate the potatoes yourself.

  13. glutenfreeREALITY

I have not found one brand of hash browns that? is gluten free – I am in New Zealand – I think we are behind on the GF scene but catching up

If you ever try it Bow you can just use? the Campbells condensed cream of chicken soup since your not allergic to gluten. It will be even quicker to make.

  19. EZGlutenFree
