What I think would be very helpful is a one page handout on gluten and? the things it can effect that can be printed to quickly introduce the concept to people. Also a video in something other than the lecture format going over the basics in 45 minutes or so. These things people will read/watch. Forums are great once you are in the know though so do keep them coming as well.
