It is most likely possible. I’m just not familiar with using an artificial sweetener in baking. If you’ve used it in other baked goods, I imagine it would work well in this. If you do try it I hope? you’ll report back whether or not it worked for you. It would help future readers of the comments.

This is a really good one? and if you want to make it even easier you could make the crust out of gluten free graham crackers of crushed gluten free shortbread cookies.
