This copycat version of Ruby Tuesday’s Chicken and Mushroom Alfredo is one of the tastiest chicken dishes out there. In their dish seasoned chicken is tossed with tender linguini, sautéed baby portabella mushrooms, green peas, and a rich Parmesan cream sauce which all sounds incredible until you discover that it has 1253 calories. Mushrooms themselves are very low in calories so if we adjust the ingredient ratios in the dish we can slash the calories and fat in this one. By using less pasta and parmesan cream sauce, but more mushrooms and peas this dish can easily fit in a healthy eating plan while still tasting very indulgent. Wow 1253 calories? – that is crazy! I really love your low cal / low fat and healthy versions of these dishes – it’s great especially b/c they are dishes that my husband would love – I’ll have to try this – thank you! 🙂
Thank? you David.
Hi Emma, Thanks for your question. The half & half that I’m referring to is an equal measure of whole milk and heavy cream mixed together. In the US it is sold already mixed under the name half & half.? In this recipe instead of using 1/4 cup of half & half, you could substitute 1/8 cup of heavy cream mixed with 1/8 cup of whole milk. I hope this helps.
Thank You Anne, This is one to try? for sure!
Also I’m sorry to sound naive, but what is ‘half and half’? I live in Australia &? have never heard of it! 🙂
It’s so interesting to hear how many calories are actually in? restaurant foods – I’ve never really thought about it! Thank you so much for giving us these alternatives! – Emma xx
Oh I agree Angie. ? The breasts are definitely an overrated part on the chicken. My faves are the wings and thighs. If you overcook the breast meat by even a minute or two it gets so dry.
Thank you, it was tasty. I appreciate you stopping by.?
A delicious plate of pasta Anne, looks terrific!?
I usually hate Chicken Breast but would? definitely eat it this way!!!!!
Thanks Chef, I appreciate it. I’m still thinking about that Chicken Marsala you made over? on your channel a few days ago.
