You like cornbread? One of my favorites now is ‘brown sugar cornbread’.
Mix: 2 eggs; 1 cup SR cornmeal; 1 cup SR flour; 1 cup cultured buttermilk (whole, fattening & wonderful); ½ cup brown sugar;? ¼ cup veg. oil.
Mix all ingredients and add more buttermilk if too thick. (Thin batter makes best bread!)
Bake 20 minutes in 400 degree oven (top rack) in a ‘hot’ and ‘oiled’ cast iron skillet.
This will make one LARGE cornbread, or two thin pones. (Two thin, crusty cornbreads are best!)

I hope you? get to try persimmons (but make sure to use the Fuyus, not the Hachiyas – the Fuyus can be eaten raw, then Hachiyas should only be used when super soft, for things like baking)! I’d never made a sauce with them before. I was so happy with how it turned out. Perfectly fall and comforting all rolled up into one bite! Happy Thanksgiving!!

I really didn’t think pancakes made from cornmeal would look good, but they did! (I thought they would favor coenbread. 🙂
