I created a low carb grain free recipe that my kids and I enjoy. Here is the recipe: 1 cup of ground dessicated coconut 1/4 ground golden flax meal 5 pastured organic eggs 1/4 cup of coconut oil 1/4 teaspoon of baking soda 1/4 teaspoon of salt 2 drops of non bitter stevia Preheat oven to 350 degrees. Mix together coconut, flax, salt and baking soda. Mix well enough so most of the lumps are gone. Add wet ingredients (eggs, stevia, coconut oil). Mix well again. Place batter in a buttered pan. Bake for 30-35 minutes until knife comes out clean.

dessicated coconut is basically just shredded coconut. i.e. the flesh of the coconut, finely shredded. I guess it must have been dried out in the preparation process, too. It’s really easy to find in most food? stores. Good luck! π
The egg is like the “glue” to hold all of the ingredients in? the same neighborhood. Applesauces and honeys create a milder sweetness than straight on sugar or even aguave. You can also soak some fruits (red raisins, or maybe currents in a little bowl with a few drops of rum extract with a tsp of honey and .5 tsp of Apple Cider Vinegar for 10 minutes to have some real bang. Add the fruits last – just fold them in and watch your friends smile…. π
Can i use coconut flour? I don’t know what? dessicated coconut is.
Applesauce did not work, however; if you take your juiced apple discard, 2 tbsp cinammon, alleviate baking soda then you? have a great granola.
I would not try applesauce as an egg replacement in this recipe.? If you use grain flour applesauce replaces eggs just fine but coconut does not contain gluten so it needs the egg for binding the bread.
I? watched another video that suggested if you don’t have eggs you could substitute 1 tablespoon of applesauce for each egg. I am going to try this with your recipe and see how it goes.
Normally I don’t like? the taste of it, it’s really hard for me to swallow. I also made a bread with only chia seeds and that smelled worse than the coconut! Maybe the flax is an essential ingredient in your recipe. I try to bake it longer, thanks again.
Do you normally like coconut? For me it is sometimes hard to swallow so I have to bake with it or mix it with other foods.
Another thought about the mushy texture… You may need to bake it a bit? longer if you try this recipe again. All ovens are not made equal so check with a knife to see if the bread has baked all the way through.
I ground the Chia yes, but I didn’t use Olive oil yet, I used the Coconut oil. I can still smell the coconut oil here in the kitchen :). I used the Nutiva one.?

My guess is that it was the olive oil that made the recipe turn out bad. Olive oil has a very strong? flavour and not traditionally used in baking. Baking recipes do sometimes call for veggie oil but normally it is a lighter tasting oil is preferred.
Butter would be a good substitute for Coconut Oil.

I tried to make it today with the Chia seeds, but? the bread came out very mushy, like a sponge. Any idea what went wrong?
Is it also ok to replace the coconut oil with let’s say olive oil? The smell was really offensive to me (maybe I used to much oil).

The flax is used? as a binder and acts kind of like gluten. Chia seeds have the same properties. But if you do not have access to Chia (which are sold in a health food store) you can add more eggs. I have not tried this so I can not tell you how many. Recipes made from coconut flour contain a lot of eggs.

That is NOW non bitter stevia extract. It is a great product. It still tastes like stevia? but it blends well with other flavours and it does not leave an aftertaste.
