A pizzelle is a traditional Italian cookie that doesn’t involve turning on the oven to get the job done. Instead, with only five ingredients, you’ll be able to whip up a quick batter and bake these pizzelles on a pizzelle iron reminiscent of the way waffles are made. For generations these thin crispy cookies have been a big part of the holiday dessert table in most Italian families. In this gluten free version I’ve converted the traditional pizzelle recipe by replacing the flour, and leavening agents in my old recipe with an equal measure of gluten free Bisquick. I need one of those little machines! These cookies look really yummy, crunchy and full of flavor! I never had one before, now I’m dying to try one!! They look really good Anne! the roll up version is great to fill it up with ice cream! and the little cups!! Oh gosh, I’m dying!
