Gluten Free Lemon Cheese Pie

Using either a premade crust or the quick gluten free pie crust in the recipe, this is no bake lemon cheese pie couldn’t be easier to make. I’ve lightened up this luscious lemony pie with reduced fat cream cheese instead of the regular variety and by replacing 1/3 of the cream cheese with low fat Greek yogurt. The pie crust is super simple to make since it doesn’t involve rolling out the dough. Instead the ingredients are mixed together then patted into the pan. It’s perfect for those of us who might feel a little pastry challenged.     I’m actually editing videos for 2 pumpkin recipes I’m uploading this coming week. Unfortunately neither? one is a cookie recipe. I’m still working on a pumpkin cookie I’m happy with. I know Brenda from NaturesFairy channel just uploaded a gluten free pumpkin cookie. Also Amy from GlutenFreeTips uploaded a gf pumpkin cookie last year. I also uploaded a pumpkin cookie recipe last year entitled “Pumpkin Muffin Top Cookies or Epic Fail” The name kind of explains it well.

    Yes 36, I bought 4 x 1 Kilo Bags that I know to be gluten free and after my guests leave, I am going to experiment with them.

    If you pop over to my Channel, I left you a little video only you can see, just showing the Flours I bought. It’s all a shot in the dark but hey ho! I am all for a bit of fun? with flour and the worse thing that can happen is I have a big bowl of wallpaper glue 🙂

    Your lemon curd recipe looks amazing. I was actually hoping? you might wan’t to leave it as a video response here so my viewers might see how simple you make it look.

    I’ve already scrubbed the jar and will be attempting to make a batch soon. The ingredients are so inexpensive that it wouldn’t be devastating if I were to screw it up. And I’m sure the homemade version is better than anything in the stores.

    Did you say 36 varieties of flour. I wouldn’t know where to begin.
