This pork loin with harvest roasted vegetables couldn’t be easier to make since it’s all roasted in a large baking pan lined with heavy duty foil for easier clean-up. The potatoes and root vegetables might have an autumn feel but the roast itself is marinated with the brighter flavors of citrus, garlic, and rosemary. I’ve also thrown in some red seedless grapes to add more brightness or even a holiday feel to this easy weeknight dinner. Thanks a million Glen. I always? appreciate it when you stop by.
That’s a really great idea to buy the huge one when it’s on sale and chop it up. Roasts are a great meal this time of the year. There’s nothing like the? smell of a roast in the oven.
Very colorful take on this pork loin recipe. Looks, and I am sure? is it top of the line! Great job.
This is a great recipe.
I dunno why this year out of all the meat choices pork has been on sale a lot. What I do nowadays is that I buy a huge thing? of pork tenderloin when its on sale and chop it up into roasts and put into the freezer.
I find that roasts is a really delicious and satisfying pick me up meal in the middle of the week just keeps us going.
