Carbonara can be a dieter’s worst nightmare but in this version the fat and calories have been drastically reduced. By skipping the heavy cream and using less pancetta the fat levels have plummeted. By adding sautéed onions and handful of peas we can use less pasta while still maintaining the same volume of food on our plate yet still have fewer calories. And this one is so easy it can be made in as little time as it takes to make the spaghetti.
