What is gluten? Gluten is the protein found in wheat and related grains. It provides elasticity and in baking, helps give it a nice light, white and fluffy texture. Because of our obsession with foods that look a certain way, wheat was genetically modified to contain over nine times the amount of gluten than its original counterpart. It’s no secret that North American diets are rich in wheat products.
