What is gluten? Gluten is the protein found in wheat and related grains. It provides elasticity and in baking, helps give it a nice light, white and fluffy texture. Because of our obsession with foods that look a certain way, wheat was genetically modified to contain over nine times the amount of gluten than its original counterpart. It’s no secret that North American diets are rich in wheat products. In fact, so many people love the effects of gluten, it is sold as an additive to help improve the consistency of a number of foods products, not just baked goods. Although some people are simply wheat intolerant — they get sick from eating products containing wheat — others cannot have gluten at all, which means they cannot eat related grains like spelt, kamut or barley.
