I just wanted to let you know I just made these again with some left over sweet potato casserole (it was a bit chunky w/ marshmallows too) and they were a hit! Everyone loved them – especially my husband! These are my? go to recipe for leftover sweet potatoes 🙂

You’ll love them. Whenever I have leftover sweet? potatoes at dinner I love to smash them up and make these muffins. You could even use an 8″ round cakepan instead of the muffin tin and have it as a coffee cake. But you would need to bake it an extra 10 minutes.
