Chewy Date and Seed Bars (nut free, gluten free**)

Posted on

**CERTAIN OAT PRODUCTS MAY CONTAIN TRACES OF GLUTEN BECAUSE THE WAY THEY ARE GROWN AN/OR PROCESSED** (Although I’m sure anyone with severe gluten related problems, already knows this) These have lots of protein too! I found all the ingredients I needed at the Bulk Barn. If the seeds are not available at your local grocery store, try a health food store. 1 cup chopped pitted dates (this can’t be left out because it acts like a binder to hold everything together, if you can think of something that would do the same job, try that). 1/2 cup water 1 cup rolled oats 1 cup hulled, roasted, unsalted sunflower seeds 1 cup hulled, roasted, unsalted pumpkin seeds 1/2 cup chopped dried apricots 1/4 cup toasted sesame seeds 1/4 cup medium unsweetened coconut 3/4 cup brown sugar 1/4 cup oat flour 1/4 cup canola oil 3/4 tsp salt Combine the dates and water in a medium saucepan and cook over medium low heat until simmering. Cook and stir for about 4 minutes until the dates are soft, mushy and most of the water is gone. Combine all the ingredients (except for dates) in a large bowl. Once combined, add the dates and stir until thoroughly mixed. Prepare a small 8×8″ baking dish by lining it with parchment or aluminium foil, grease the foil or parchment. Pour the mixture in the pan and press mixture evenly in the bottom of the pan. Bake at 350F for about 35 minutes or until top is evenly golden. Let cool completely. Remove from pan by holding the paper/foil and lifting out. Cut into bars

I have these in the oven right now. I could not find the oat flour, but I do not have? a gluten allergy, so I used wheat flour. I cut back the sugar to 1/2 cup since I had sweetened coconut on hand. I will let you know how we enjoy them.

  23. yoyomax12

Thank you for letting me know? about your variation on these 🙂 It sounds delicious.

I think gamemasteraj05? said ‘You said no nuts’ because at 1:33 you said ‘You can remove any of these fruits or nuts which you don’t like’. Also coconut is nut 😉

  25. meghan151993

I think it’s? because you said “you can substitute any fruit or nuts” at 1:30
